
Coyo Taco | Bayside
Coyo Taco is already a Miami institution, and for their Bayside location they trusted our studio to design a space that extends the brand rather than imitate it. We grounded the concept in the energy of Mexico City after dark. Neon, weathered-washed walls, the warmth of a late-night taquería and used cobalt blue as the project's anchor, carrying it across walls, structural columns, custom steelwork, and fixtures until it became part of the architecture. The material palette is tight: washed white brick, polished concrete, exposed ceilings, and a custom blue-and-white botanical tile on the bar face, drawn from Talavera and Puebla traditions but scaled for a contemporary read.
Lighting and furniture were designed in-house. We created a set of custom neon line drawings cats, marigolds, wildflowers in electric violet, mounted along the bar's upper rail so the artwork doubles as ambient lighting. A custom cobalt-steel sconce with a vertical cluster of frosted globes balances the neon with warmer light against the brick. The bar stools were designed to match: cobalt powder-coated steel rod, open grid backs, cognac leather cushions, with geometry that echoes the industrial mesh paneling throughout the bar's framework. The result is a Coyo location that's distinctly Bayside, same brand, new chapter and we're grateful to the team for giving us the room to build it.
